Sugar Bush – Tapping for Maple Syrup

As yet, it’s a bit early for the sap to run. Last night, the temperate dropped to around -12 and tonight it’s supposed to get colder. But soon, the sap will be rising from the roots of these maple trees and filling the buckets. This is a special time here in Canada when children get a day off school to go out into the bush and watch the farmers stoke fires under big tubs of sap to steam away the water, leaving the sugary treat.
